One of the most unique things about Zely & Ritz is that so much of our produce and meat comes from our own organic and sustainable farm.  Often the food you enjoy at dinner was picked fresh on the farm that morning and brought in to Chef Sarig early so he can decide what incredible dish he is going to create with it and then served to you that evening. You can taste the difference.
 
The question I am most often asked when I’m at the restaurant is if diners can buy Coon Rock Farm meat and produce directly from the farm? Last year, almost everything went to the restaurant, but now the answer is “YES”.  This year we have doubled our planting area and doubled the size of our flocks and quadrupled the number of chickens.  Spring crops are coming in strong now and this weekend we processed the first lamb, goat, and chicken of the season.  You’ll find all of these items on Chef Sarig’s menu this week and  now we have some extra for customers who would like buy from the farm.
 
The chickens are an old variety called Delawares and they are truly nothing like the commercial chicken from the grocery store.  These chickens live outside in the fresh air and get much of their food from the pasture. They are supplemented with a 100% vegetable grain diet.  These birds are 15 weeks old versus just 7 weeks for commercial birds and they have far more texture and taste.  They weigh about 3.5 pounds each and sell for $16.00 per bird.
 
The lamb and goat are pasture raised completely on grass with no antibiotics or hormones. Sheep and goats natural diet is grass and when fed this way the meat is not only healthier and leaner, but it just simply tastes better.  Each animal is divided into quarters which contain a leg plus part of the backbone, ribs, sides, etc.  This is not the way you see meat cut in the grocery store but it is how we like it at the restaurant where we can then further cut it into just the roasts, ribs, etc that we want.  It’s a little more work on the cook, but it’s a less processed and more natural delivery of the meat.  Lamb quarters weigh between 10 and 15 pounds and goat quarters are between 6 and 12 pounds.  The price is $6:00 per pound.
 
On the veggie front we have lettuce, spinach, baby beets, baby carrots, bok choi, pak choi, english peas, sugar snap peas, and new red potatoes.  We also have eggs.
 
You can buy any of these items now at the farm in Hillsborough or you can pick them up at the restaurant between 5:00 and 7:00 this Wednesday night, the 7th.  Just email me and let me know what you would like and where/when you’d like to pick it up.  Email me with any questions as well to richard@zelyandritz.com.
